We believe the nutrition of whole grain flour should extend beyond your typical “healthy” recipes. There is no reason to reserve the fiber and nutritional value of the whole wheat berry to certain recipes. We challenge you to try whole wheat flour in all of your baking. To start this challenge, we are providing you a recipe for whole wheat maple bacon donuts.
Whole wheat flour is typically thought to be dense and have too much bran for the tender, light, and airy donuts we all love. However, whole wheat flour does not have to be dense and the flavor of the bran pairs well with many ingredients often found in baking. We grow and sell two varieties of white wheat berries perfect for this recipe. The soft white wheat berry and the hard white wheat berry both provide a mild flavor and a deep, rich color.

In this recipe, fresh milled flour is combined with brown sugar, maple syrup, and apple cider. It is then topped with a maple glaze and your favorite bacon to give you tender maple bacon donuts that will become a family favorite! We promise it will rival any maple bar recipe made with traditional all-purpose flour.
This is a yeast recipe, so it does require a little extra time, but can be prepared in only 10 minutes before being left to rise for an hour. After the dough has risen, it is gently placed on a well floured surface and shaped. There is no need to wait any longer, just heat your oil and fry to perfection! If you like, you may also prepare and shape your donuts the evening before and let them rest overnight in the fridge. If you choose this option, be sure to spray the donuts with cooking spray and cover with plastic wrap before placing in the fridge. Pull the donuts out to room temperature for 20 minutes before heating your oil.
Donut Recipe Tip: If you are looking for more of a maple bar recipe, after your dough has risen, gently pat into a rectangle and cut into 8 small bars. Be a little cautious when frying if you chose the maple bar recipe, as it will fry more uneven than the traditional donut shape.

- 2 1/4 cups (290 grams) milled Hard White Wheat Berries or Soft White Wheat Berries
- 1 ½ teaspoons instant yeast
- 2 tablespoons brown sugar
- 1 tablespoon maple syrup
- ½ teaspoon table salt
- 2 ounces (1/2 stick) unsalted butter, room temp, chopped
- ½ cup apple cider, warmed to 100 degrees
- 1 teaspoon vanilla
- 1 large egg
- frying oil of choice (we recommend safflower, or canola)
- 4 strips of your favorite bacon, chopped and crisped
- Place flour, yeast, brown sugar, maple syrup, salt, and chopped butter into a stand mixer. Mix with a paddle attachment until butter has been broken down and mixture is mealy.
- Add apple cider, vanilla, and egg to the flour mixture.
- Paddle on medium-high speed for about 5 minutes. You should see the dough start to pull from the side of the bowl as the mixer builds gluten.
- The dough should be wet and slightly sticky. Scrape the dough into a well-greased bowl and cover with plastic to rise for 1 hour.
- Once dough has risen, generously flour your work surface and gently remove the dough onto your work surface. Dust the top thoroughly with flour but do not punch down.
- Carefully pat the dough to be about 1/2” thick. Use a 3” round cutter or an upside down water glass to cut your donuts to size. Use a 1” round cutter or an upside down shot glass to cut your donut holes.
- Heat your frying oil of choice to 360 degrees in a heavy bottomed pot.
- Fry donuts two at a time for about one minute, turning half-way through, and allow to cool on paper towels. Donut holes will fry quicker.
- Once cooled, dip in maple glaze (recipe below) and top with crisped bacon

Maple Glaze Recipe
- 2 tablespoons unsalted butter, melted
- ¼ cup maple syrup
- 1 cup confectioners’ sugar
- Mix all ingredients together until smooth.
