3 cups of multi purpose flour
1 tsp baking powder
1 tsp baking soda
1 tbs pumpkin spice
½ tsp salt
½ cup butter, room temperature
1 cup granualted sugar
½ cup brown sugar, packed
1 15 oz can pure pumpkin puree
1 large egg
2 tsp vanilla
½ cup butter
1 cup brown sugar
¼ cup heavy cream
2 cups powdered sugar
In a medium bowl whisk together dry ingredients.
Preheat over to 350 degrees and grease cookie sheets.
In a large bowl cream together butter and sugars until light and fluffy. Add pumpkin, vanilla and egg and cream until combined.
Add dry ingredients and stir until just combined. Use a scoop and place cookies 2-3 inches apart.
Bake for 12-15 minutes. Let cookies cool completely and then frost.
Brown Sugar Frosting
In a medium sauce pan melt butter and boil for 2 minutes. Stir in brown sugar, reduce heat and continue to let boil for 2 minutes.
Stir in heavy cream. Remove from heat and pour into large bowl, stir in powdered sugar.
