How to Cook Spelt

1 cup of Clear Creek Spelt

3 Cups Water

Rinse the spelt, add 3 cups water to a pot, bring water to a rolling boil. Add barley then simmer for 40-60 minutes or until desired tenderness. Drain well.

Looking at this recipe for a spelt bowl, I noticed this, in the instructions,“Add barley then simmer…” so I did some research suggesting that barley and spelt are similar grains, but not identical, or are they? I even found reference to “spelt barley”! Please clarify. Thanks!
