Stuffed Sweet Potatoes

4 medium sweet potatoes
4 tsp olive oil
3 cups cooked black lentils
1 cup tomato sauce
1 tbs chili powder
½ tsp cumin
½ tsp onion powder
½ tsp garlic powder
¼ tsp salt
Preheat over to 400 degrees.
Wash potatoes, poke 3 or 4 times with a fork, rub with oil and bake for 50-60 minutes until tender.
While potatoes are baking, prepare lentils.
When lentils are cooked add, tomato sauce, chili powder, cumin, onion powder, garlic powder, salt.
Simmer uncovered on medium-low for 5 minutes to develop flavors.
When potatoes are done, split them down the middle slightly mashing the inside. Fill with lentils. Top with cheese, guacamole, sour cream, lime juice or cilantro.
