2 cups dried black beans

Water as need to soak and cook black beans

¼ cup olive oil

2 small yellow onions, chopped

2 tbs garlic, minced

2 jalapeno peppers, seeded and chopped

2 tsp salt

½ tsp cumin

1 lime, juiced

3 tbs water
-
cilantro as garnish (optional)
Directions
Rinse black beans. Soak the beans over night in 2 inches of water.
Drain and rinse the black beans.
Place the soaked beans in a large pot and cover them with water (about 2 inches above the beans). Bring to a boil, then reduce the heat to low and simmer, partially covered, for 60-90 minutes or until the beans are tender. Add more water as needed to keep the beans submerged.
Drain beans and set aside.
In a medium pan over medium heat oil. Saute onions, garlic, jalapenos for 10 minutes or until very soft.
Add onions, peppers, and garlic to a food processor with black beans, salt, cumin, lime juice, and water. Blend until smooth.
If the dip is too thick add more water.
Serve warm or cold with tortilla chips.
Optional: Garnish with cilantro
