Grilled Raspberry Cobbler
The Grilled Raspberry Cobbler is the epitome of summer indulgence, bringing together the natural sweetness of fresh raspberries and the delightful aroma of a perfectly grilled crust
6 cups raspberries
½ cup brown sugar
2 tbs multi-purpose flour
½ tsp cloves
1 tsp cinnamon
¼ tsp kosher salt
2 tbs butter, cut into cubes
1 cup multi-purpose
¼ cup brown sugar
1 1/ tsp baking powder
½ cup heavy cream
¾ cup butter, melted
Pinch of Salt
Preheat grill to 350 degrees.
In a bowl combine raspberries, sugar, flour, cinnamon, cloves, and salt. Stir to combing until everything is evenly coated.
Pour mixture in a 10-in cast iron pan. Top with the cubes of butter.
Place skillet on the grill, cover, and cook until bubbling and hot, about 15 minutes.
While the raspberries are cooking, make the biscuit topping. Combine all the biscuit ingredients and stir until combined.
At the end of the 15 minutes, dollop the raspberries with dough mixture all over. Cook until the biscuits are browned, about 15 minutes.
Remove from grill and let rest 10 minutes before serving with whip cream or ice cream.
