Lentil salads are so much fun! We have a bit of an unusual twist to our vegan lentil salad lineup and you are going to fall in love with it!  Yes, Tropical Lentil Salad. This recipe for lentil salad has a great lentil salad dressing made with lime juice and ginger. While this lentil salad recipe sounds unusual you will love it! It is a great lentil recipe for a toddler. What toddler doesn’t love pineapple? The more we use lentils the more we fall in love with how versatile they are!

The pineapple and lime really carry the flavors of this salad and the ginger packs some zing.

This tropical lentil salad recipe is one of the easiest lentil salads to put together. Our lentil salad recipe only calls for ½ cup of these delicious lentils and we also prefer dried lentils to canned. Canned lentils have a very different texture than dried when cooked. It does not sound like much and you may be wondering, how this salad can possibly serve 2-3 people because it just doesn’t seem there is enough volume.  No worries, these little powerhouse lentils will expand once cooked, and you will have the stated servings. As always, you can prepare your lentils in advance. Lentils have a cooking time of about 30 minutes, Another great thing about lentils is unlike their other legume counterparts, lentils don’t require soaking before cooking. Cooking for one? You can make this early in the week and enjoy the leftovers all week long!
