Yellow Split Pea Soup Recipe

Yellow Split Pea Soup Ingredients
1 ½ cups dried yellow split peas, rinsed
1 TBSP vegetable oil
1 ½ cups chopped onions
2 cups chopped carrots
¼ tsp black pepper
7 cups water, divided
½ tsp fine sea salt
How to Make Yellow Split Pea Soup
1. Heat oil over medium-high heat in a large saucepan and add carrots, onion and pepper. Stir frequently for 8 minutes or until vegetables are tender.
2. Add peas and stir in salt and 6 cups of water while bringing to a boil. Once boiling, reduce the heat to medium-low, cover and simmer for 35-40 minutes or until the peas are tender, stirring occasionally.
3. In a food processor add 1 cup of the soup solids and the remaining 1 cup of water. Process until smooth and return the puree to the pan. Simmer for 5 minutes stirring often in order to mix the flavors completely. If the soup is too thick you can thin it by adding more water.
