Super healthy and terrific chili is what we are making here.  Our easy chili recipe is completely what we call a “do-over” – meaning we love to do it over and over again!

  • 2 ½ cups hard red spring wheat
  • 2 cups water
  • 3 cups vegetable broth
  • 2 tbsp. extra-virgin olive oil
  • 1 medium size onion, diced
  • 2 garlic cloves, minced
  • 2 tsp. paprika
  • 1 tbsp. chili powder
  • 2 tsp. oregano
  • 1 tsp. coconut sugar
  • 1 tsp. ground black pepper
  • 2 tsp. kosher salt
  • 2 tsp. onion powder
  • 1 (14 oz.) can fire-roasted crushed tomatoes
  • 28 oz. tomato sauce
  • Shredded cheddar cheese, vegan
  • Fresh cilantro, chopped
                                    1. Add olive oil to a medium sized skillet and brown onions and garlic, stirring often.
                                    2. Meanwhile, place all remaining ingredients, with the exception of the shredded cheese and cilantro into your slow cooker and add onion/garlic mixture when browned.
                                    3. Cook over high heat for approximately 7-8 hours, or cook over low heat for approximately 11-12 hours.
                                    4. Season to taste at the end of the cooking time and serve.
