When we first came across this recipe from the Daring Gourmet, we fell in love! This recipe is refreshingly light and so easy. We've made it even easier by taking Daring Gourmet's recipe and tweaking it just a tad. Instead of making our own salad mix, we used a bag of broccoli slaw and used store bought Hoisin sauce instead of making our own. It's always a great idea to have a few great wheat berry salad recipes. They make a great side to any meal but with the protein packed wheat berries they can also stand alone. Asian Wheat Berry Salad


cup raw soft wheat berries 

3 cups water

1 package Broccoli Slaw

3 tablespoons extra virgin olive oil 

tablespoons toasted sesame oil 

tablespoons hoisin sauce


1. Bring the water to a boil in a medium saucepan. Add the wheat berries, stir occasionally, boil for 30 minutes. Start checking the wheat berries to see how tender they are. Cook until the reach desired tenderness. Drain, set aside. 

2. In a small bowl mix together virgin olive oil, sesame oil, and hoisin sauce. Mix until blended, set aside. 

3.  In a large bowl combine wheat berries, broccoli slaw, and vinaigrette. Mix well, until combined. 

4. Cover and then refrigerate for 2 hours or overnight before serving.
